Okay, now that I have your attention, I wanted to tell you about last night. I made a chicken, cabbage, bell pepper, and sweet pea stir fry for dinner, no pasta or rice in sight.
WAIT, WHAT??? No rice with my stir fry??
That’s right. I, Lisa Keifer, actually made Chinese food without any starches. And you know what? I loved it! Now, okay, I won’t lie and say I didn’t miss the rice. I totally did. But this is a step in the right direction.
I am so proud of myself right now and have been since dinnertime. I made a conscious effort at making a healthier meal. This has helped raise my happiness level and lower my depression level. Of course, it would be wrong for me to say only eating healthier will completely vanquish my or anyone else’s depression. However, I do believe it can be one step among many on the path toward peace of mind.
While I haven’t really followed a healthy eating lifestyle much, or even at all, for almost two years, I know I can get there again. If consuming a filling, delicious meal without indulging in unnecessary calories will get me there, I’m all for it. (By the way, Choo-choo loved the nutritious dinner, too 🙂 )
